Did you know that wine in its simplest form is merely the fermentation of fruit juice through the addition of yeast ?
The most common and indeed succesful fruit is obviously the grape.
This is where the simple part of wine now ends !!
There are so many grape varieties - I can find reference to 177 in 1925 with new varieties being generated or discovered every year since. These varieties all have their different facets which range from skin thickness, texture, tannin content, climate adaptation, fruiting times etc and adding in the different soil types, exposure to sunlight, varying seasons, rainfall patterns, picking points in their development and finaly the fermentation process itself. Red grapes can produce white wines if their skins are not left with the juice for any of the fermentation process. They become rose wines if left for a couple of days and red if left for longer. If the yeast is left with the wine for a shorter time, then you will get a sweeter, less alcoholic wine but a drier, generaly more alcoholic wine, is developed if the yeast is left for longer. The temperature at which fermentation takes place can produce different results - and hence the whole wine experience has a vast realm of flavours to be explored !!
